There's actually a (somewhat incomplete) Italian translation that is packaged with the game (the same version that beta_helix linked, you just don't have to do anything to install it).

On the login screen, just click the "Set Language" button (a picture of the world). Double click the line that has the Italian flag and says "[it] Italiano". It will notify you that it is about to restart. When foldit starts up again it should now be in Italian.
