Dear Foldit developers,

I would like to use Foldit as an interactive homework assignment for a course I am teaching. Is there some way that I can have the students provide proof that they have completed an "assignement," such as completing the tutorial or solving some basic puzzles?

You could look at "Achievements", see your own page (click on Boltz_man above). That is proof of completing each tutorials. As for puzzle, you can also see score on your page if you start a puzzle. There is no "solving" a puzzle but you can improve one by having a higher score. Try one yourself, you will see the report on you page also.
