In the intro puzzle tutorial you learn how to freeze sheets. The explaining text tell you to double click by pressing the shift key to freeze a sheet. But it works with a single click plus shift.

That's not correct.
A single click plus shift freezes only the segment (one amino-acid), shift + double click will freeze the entire secondary structure (sheet, helix or loop).
