Should something like "The orange sidechains (hydrophobics) should be on the outside and the blue sidechains (hydrophilic) on the inside."
It's longer, but more understandable.

Zoran has some weird prejudice against long text. That's the real reason why. ;)
This text will probably not last too long anyway, since the level it's in isn't very good. I'm done making small tweaks to the text since I've found that they don't have any noticeable effect on player success, and instead I will be making more major changes to the levels.
